Klondike fingerlings are a small variety of heirloom potato with a rich nutty flavor and smooth, buttery texture. These boutique potatoes are great for any preparation that uses conventional potatoes and are particularly good roasted, fried, or mashed.

 

Uses: Simmer potatoes with a generous amount of garlic, thyme, and salt until a toothpick pierces easily. Halve potatoes, season generously with salt, pepper, and oil then roast until well caramelized and tender. Finish with butter.
